But have you ever wondered how this regional cuisine from Szechuan, China traveled the world and became so famous? In this article, we are going to discover the historical roots of Szechuan cuisines and their journey through time, and we are finally going to discover how these became world famous.

Origin of Szechuan Cuisines

Szechuan Cuisines originated among the craggy mountains, deep valleys, and cliffs of Szechuan, China, where you’ll find an abundance of medicinal herbs including fagara peppers and red chilies of the capsicum family. These chilies along with other ingredients such as garlic, ginger, spring onions, fermented bean paste, and chili sauce are extensively used in Szechuan cuisines, lending it its famous pungent taste.

Ancient Culinary Traditions

In ancient culinary tradition, Szechuan cuisines were made balancing the heat and the intricate flavors. Aromatic ginger, garlic, and star anise were commonly used in these dishes, these ingredients gave the dishes their bold flavors that are commonly associated with Szechuan dishes.

The National Prominence of These Szechuan Cuisines

Szechuan Cuisines were practically unpopular outside the province of Szechuan, before World War II. However, during the war, the nationalist government moved its headquarters to Chungking (Chongqing), which led to it becoming popular. For almost eight years, government officials, military personnel, and civilians indulged in the flavors of Szechuan. When they finally returned to Shanghai and Nanjing, they brought with them the Szechuan flavors and their skilled chefs, who eventually made these cuisines popular in the rest of China.

Global Popularity of Szechuan Cuisines

The Szechuan cuisine became globally famous in the 20th century, when the Szechuan Mapo Tofu, Dan Dan noodles, and Chili oil became a symbol of resilience and comfort food. These dishes with their fiery and bold flavors, transcended barriers and found their way into the kitchens and restaurants worldwide.

Szechuan Cuisines Nowadays
